Pongal is Tamil Nadu most important festival. Pongal means to boil over — representing abundance. Cattle are honoured on Mattu Pongal.

Boil fresh rice, milk, and jaggery in a new clay pot until it overflows. Offer it to the Sun. Decorate cattle with garlands.
